Cous cous & Roasted Vegetables and Chicken Tagine

Method

  1. Fry the chicken thighs in oil until golden brown.
  2. Add the diced onions, garlic and all the spices
  3. Add the tomato sauce and chopped apricots.
  4. Simmer for 30 minutes.
  5. Simmer for 30 minutes.
  6. Season with a little salt and serve with some cous cous.
