Brunching is becoming the new norm! Why not rustle up this tasty potato cakes served with smoked salmon and cream cheese.

Smoked Salmon

Method

  1. Cook the mash as per instructions and mix with an egg, flour and sliced spring onion
  2. Split the mix into 4 balls and press to form 4 cakes
  3. Heat the butter in a pan and fry the potato cakes until gold-en on each side
  4. Serve warm with a dollop of cream cheese and a wedge of lemon
