Supreme Coronation Chicken Salad

Method

  1. Blanch your asparagus for 3 minutes.
  2. Cut your cherry tomatoes in half.
  3. Slice your spring onions.
  4. Finely shred the mange tout.
  5. Peel and slice the avocado.
  6. Wash and prep the Cos leaves.
  7. Plate up the salad giving the Coronation Chicken prime place on the plate.
  8. Garnish with a wedge of lime and a few herbs of your choice.
