‘Cornish pasty’ – the rules:
There are strict regulations in place regarding Cornish pasties after they were awarded Protected Geographical Indication (PGI) status in 2011. This means that only Cornish pasties made in Cornwall and following the traditional recipe can legally be called and sold as ‘Cornish pasties’.
According to the Cornish Pasty Association, the mandatory fillings are sliced or diced potato, swede (often referred to as ‘turnip’), onion, diced or minced beef and seasoning to taste, primarily salt and pepper. No meats other than beef, and no vegetables other than those listed in the mandatory ingredients can be used in the filling.
The meat content must not be less than 12.5% of the whole pasty and the vegetable content must not be less than 25%. The listed mandatory ingredients must be uncooked at the time of sealing the product.
