Cajun Chicken Chilli Bean Rice


  1. Gently fry the diced onion and red pepper in the vegetable oil.
  2. Add the spices and continue to gently fry for 1 minute.
  3. Make up 250ml chicken bouillon as per pack instructions.
  4. Add the chicken bouillon and kidney beans.
  5. Simmer for 8 minutes then add the green beans, peas, sweetcorn and chicken pieces.
  6. Simmer for another 6 minutes and remove from the heat.
  7. Fold in the chilli sauce.
  8. Season with salt and pepper.
  9. Garnish with chopped coriander.
