Ingredients
10 Total- 75 g Country Range Mascarpone
- 75 ml Country Range UHT Dairy Whipping Cream
- 20 g icing sugar
- 1 lime
- 1 banana, sliced
- 50 g tin condensed milk caramel
- 20 ml rum
- 4 sponge fingers
- 2 espresso shots (35ml each)

Step 1
Mix the mascarpone, icing sugar, lime zest and juice and whipping cream to a smooth mix. -

Mix the rum and espressos together. -

In a glass, pipe in some mix.

Add a few slices of banana. -

Add 3 of the sponge fingers halves. -

Moisten the sponge fingers with the coffee mix. -

Repeat the process and finish with a layer of mascarpone mix.

Top with a slice of banana.
