  • 80 g Country Range Couscous and Roast Vegetables
  • 10 ml Country Range Vegetable Oil
  • 100 g Country Range Tomato and Basil Sauce
  • 4 ea boned chicken thighs
  • 1/2 tsp Country Range Whole Cumin
  • 1/2 tsp Country Range Whole Cumin
  • 1/2 tsp Country Range Whole Coriander
  • 1 ea Country Range Cinnamon Stick
  • 30 g Country Range Dried Apricots, sliced
  • 1 tbsp fresh coriander, chopped
  • 1 ea onion, diced
  • 1 tsp Country Range Garlic Purée

Method

    Step 1

    Fry the chicken thighs in oil until golden brown.
  • 2

    Step 2

    Add the diced onions, garlic and all the spices.
  • 3

    Step 3

    Add the tomato sauce and chopped apricots.
  • 4

    Step 4

    Simmer for 30 minutes.
  • 5

    Step 5

    Season with a little salt and serve with some cous cous.
