1 onion, chopped
4 cloves garlic, crushed
150 g Country Range Tomato Soup Mix
3 pts cold water
1/2 cucumber, peeled and diced
1 green pepper, diced
2 tbsp Country Range Tomato Paste
2 tbsp parsley, chopped
1 lemon, juice only

method
- 1Sauté the onion and garlic in a little oil until soft.
- 2Add sufficient cold water to the soup mix to make a smooth paste, add the remaining cold water. Add the onion and garlic and bring to the boil. Simmer gently for 10 minutes stirring occasionally. Leave to cool.
- 3Add all the remaining ingredients and liquidize to a smooth purée.
- 4eason to taste and chill for 3-4 hours.
