Jamaican Jerk Potato Salad

  • 450 g red potatoes, chopped (skin on)
  • 4 tbsp Country Range Light Mayonnaise
  • 1 tbsp Country Range Jamaican Jerk Seasoning
  • 6 spring onions, sliced

Method

    Step 1

    Boil the potatoes for 10-15 minutes until just cooked then drain.
  • 2

    Step 2

    Mix the mayonnaise with the Jamaican Jerk seasoning.

    Step 3

    Mix the potatoes with mayonnaise and spring onion and place into a serving bowl.
  • 4

    Step 4

    Serve at room temperature.
