  • 100 g Country Range Marinated Piri Piri Chicken
  • 10 ml Country Range Olive-Pomace Oil
  • 25 g Country Range Grated Mild White Cheddar
  • 30 g Country Range Salted Butter
  • 2 jacket potatoes
  • 5 g Maldon Sea Salt
  • 2 spring onions, sliced

Method

    Step 1

    Pre-heat the oven to 180°C.

    Step 2

    Rub the jackets with oil, prick a few times and sprinkle with salt.

    Step 3

    Bake for 45 minutes until tender.

    Step 4

    Mix the chicken pieces with spring onion and grated cheddar.

    Step 5

    Open the potato, place a mound of chicken mix inside.
  • 6

    Step 6

    Top with a nice knob of butter and place in the oven for 2 minutes.

    Serve with a nice, crisp salad.
