450450 g pork fillet medallions

1-2 1-2 tbsp Country Range Piri Piri Seasoning

22 tbsp oil

For the coleslaw:For the coleslaw:

½ ½ white cabbage, shredded

1 1 red onion, peeled and finely sliced

1 1 large carrot, peeled and grated

33 tbsp Country Range Light Mayonnaise

11 tbsp Country Range Wholegrain Mustard

  • 1Mix the coleslaw ingredients together.
  • 2Mix the pork medallions with Piri Piri Seasoning.
  • 3Heat the oil in a frying pan and fry the pork for 3-5 minutes each side until cooked through.
  • 4Serve Piri Piri pork with the mustard coleslaw and Country Range Seasoned Wedges. Garnish with chilli and coriander.
