Roasted Courgettes with Balsamic Mascarpone Dip
5050 g Country Range Mascarpone
55 ml Country Range Balsamic Vinegar
55 ml Country Range Olive-Pomace Oil
1 1 tbsp fresh basil, chopped
1010 g parmesan, grated
- 1Pre-heat oven to 240°C.
- 2Cut the courgettes into large chunks, brush with a little olive-pomace oil and roast in a hot oven (260°C) for 6 minutes.
- 3Mix the mascarpone, basil, balsamic and parmesan together and serve with courgettes.
