Tomato and Lentil Soup
150150 g Country Range Tomato Soup Mix
3 3 pts cold water
100100 g Country Range Red Lentils
1 1 tbsp thyme, chopped
crispy strips of bacon to garnish
- 1Mix sufficient water with the tomato soup mix to make a smooth paste, blend in the remaining cold water, lentils and thyme.
- 2Bring to the boil, reduce the heat and simmer gently for 20 minutes until the lentils have softened. Stir occasionally to prevent sticking.
- 3Serve hot, in deep bowls garnished with crispy bacon.
