Vegetable Tikka Kebab

Method

  1. Peel and dice the sweet potato into 3cm squares and steam for 5 minutes.
  2. Cut the pepper and red onion into 3cm squares and wash the mushrooms.
  3. Marinate all the vegetables in yogurt and tikka paste for 2 hours.
  4. Place the vegetables on skewers as follows; sweet potato, pepper, mushroom and repeat again.
  5. Cook on an oiled tray in a hot oven at 220oC for 6-8 minutes.
  6. Serve with Country Range Easy Cook Basmati Rice and Country Range Mango Chutney.
