Blueberry Wholemeal Muffins

Ingredients

  • 2 Ripe bananas
  • 250 g Blueberries
  • 300 g Wholemeal Flour
  • 75 g Country Range Butter
  • 3 tsp Country Range Baking Powder
  • 1 tsp Bicarbonate of Soda
  • 1 Egg
  • 125 g Country Range Honey or Maple Syrup
  • 200 ml Buttermilk

Method

  1. Mix the butter, honey and banana flesh until light and fluffy
  2. Add the beaten egg and buttermilk
  3. Add all the dry mix and blueberries
  4. Spoon into muffin cups and bake at 180 for 12 minutes
