5 Bean Mixed Chilli and Nachos
3 3 tablespoons olive oil
11 diced onion
1 1 garlic clove chopped
1 1 red pepper
1 1 green pepper
1 1 yellow pepper
1 1 teaspoon mixed herbs
1 1 teaspoon hot chilli powder
2 2 tablespoons tomato puree
1 1 teaspoon ground cumin
½½ teaspoon paprika
1 1 tin Country Range chopped tomatoes
450 450 g 5 mixed beans
300300 ml vegetable stock (vegan)
salt and pepper to tastesalt and pepper to taste
- 1Heat oil. Add onion, garlic, peppers, mixed herbs and chilli powder and fry for approx. 5 mins or until soft.
- 2Stir in the tomato puree, cumin and paprika, heat through. Add the tomatoes and beans. Season with salt and pepper.
- 3Increase the heat and bring to the boil, then reduce heat, cover and simmer for 30 mins.
- 4Serve on a generous bowl of Country Range nachos with soured cream, guacamole, salsa and jalapeno peppers.
