Crispy Pancetta and Scrambled Egg Breakfast Bagels

2 2 bagels

2 2 Country Range Mature Cheddar Cheese Slices

5 5 g Country Range Butter

33 Country Range Free Range Medium Eggs

100 100 g pancetta

0.5 0.5 tsp salt

0.5 0.5 tsp pepper

Multiply by
  • 1Lay the slices of pancetta on a baking tray and grill until crispy.
  • 2Beat 3 eggs together in a small bowl.
  • 3Add a knob of butter to a pan and allow to melt on a medium heat.
  • 4Add the eggs, season with salt and pepper and stir until scrambled.
  • 5Slice the bagels in half and lay out on a baking tray.
  • 6Butter the bagel halves and top with a slice of mature cheddar.
  • 7Add a good helping of the scrambled egg mixture.
  • 8Top with a couple of slices of the crispy pancetta and replace the bagel lid.
  • 9Place in a pre-heated oven (200ºC) for 5-6 minutes.
  • 10Remove from the oven and serve with a strong coffee.
