66 kg Country Range Sponge & Pudding Mix
66 ltr Country Range UHT Dairy Whipping Cream
750 750 g Country Range Instant Coffee Granules
200200 g granulated sugar
1010 ml lemon juice
5050 ml vanilla essence
Country Range Cocoa Powder for dusting
- 1Make up the sponge and pudding mix and pour into a large flat tray so that it is one inch deep. Bake in the oven (180°C) very flat for 50 minutes.
- 2Add the lemon juice and vanilla essence to the whipping cream and whip it up until it is stiff and forms peaks.
- 3Make up the hot coffee in a jug and add the sugar. Pour it over the sponge until it is completely soaked.
- 4Smooth the cream over the layer of coffee-soaked sponge.
- 5Add another layer of sponge then a second layer of cream.
- 6Before serving, dust with Country Range Cocoa Powder.
